Thai chicken curry
I made this curry dinner last night. It was excellent and it is so easy to make. I used red curry paste, lite coconut milk, and zucchini instead of broccoli because we have so much coming from the garden. Served it with brown rice.

I'll have to try that. Sounds quick and easy. I love coconut milk + curry flavor.

Oooh! We had that last week!!!! It IS easy to make and darn yummy too

I'm inspired....

I wonder how it would be with rice noodles? We went to the Asian market over the weekend and I have a pack of fresh rice noodles. Yum.

I think it would go great with rice noodles. We use those a lot and the bean threads too.
