I just made the fresh fruit and cheese martini from George Stella's cookbook. YUMMY!!! I used frozen blueberries and strawberries. *heaven*
No recipes, no pics, just gloating. :jack:
I'm still eating. :D
Recipe to follow. :p
1/2 C ricotta cheese
2 T Splenda
1/2 C small cantaloupe balls
1/2 C small honeydew melon balls
1/2 C blueberries
1/2 cup strawberries, sliced
2 T dry Champagne, optional (I left it out)
1 t freshly grated lemon zest (don't use dried)
1 T chopped pecans (I was too lazy to do the pecans)
Strawberries and blueberries, for garnish
1. In a bowl, whisk together the ricotta and 1 T of Splenda.
2. In a separate bowl, combine the fruit and remaining 1 T Splenda.
3. Place 2 heaping T of the fruit mixture into each of the 6 martini glasses and top each one with 1 heaping T of the ricotta mixture.
4. Sprinkle the martinis with lemon zest and pecans.
5. To garnish, use a frilled toothpick or sword pick to skewer a strawberry and a couple of blueberries and stick it into the top of each martini.
Serves 6.
I made just one serving and didn't make it fancy. I put some ricotta and Splenda in a bowl, topped it with frozen berries and lemon zest and mixed it all up.:D

So did you even put in the melon?
No, I guess I barely followed the recipe. But it was still really good. :D
