The no-bake cheesecake is my favorite. Not the baked ones.
Totally different texture/flavor to me.
If you buy a pre-made crust at the store, you eliminate a few steps.
NO BAKE LEMON CHEESECAKE
INGREDIENTS:
* 3 cups graham cracker crumbs
* 1/2 cup butter
* 1 tablespoon confectioners' sugar
* 1 (3 ounce) package lemon flavored gelatin mix
* 1 cup boiling water
* 1 (8 ounce) package cream cheese, softened
* 1 cup white sugar
* 1 teaspoon vanilla extract
* 1 (5 ounce) can evaporated milk
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and confectioners' sugar. Mix well and press into the bottom of a 10 inch springform pan. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool. Turn off oven.
2. Dissolve lemon gelatin in boiling water. Let cool until thick, but not set. In a large bowl, beat cream cheese, white sugar and vanilla until smooth. Set aside.
3. In a separate bowl, whip evaporated milk until thick and stiff peaks form. Pour in lemon gelatin and keep mixing until well blended. Fold in cream cheese mixture.
4. Pour filling into crust. Chill in refrigerator for at least 3 hours before serving.

I would love to share my perfect recipe with you.
But it was a complete disaster for my family party on Friday. :jack:
It wouldn't get done-- so I kept it in so long that the crust burned.
Then, you know how it rises, then settles down as it cools? Well, only 1/2 of it settled, so I tried to put cherry topping on it and the topping slid down the cake into the "valley" :bang:
ARGH It was not my shining moment.
And -- even once you cut off the burnt crust it didn't have enough "cheesecake" flavor. It was just fluffy. It was a mix of cream cheese and sour cream, maybe that was the problem, next time all cream cheese, I like really dense cheesecakes.

Have never made a cheesecake.... hmmmmmmmmm .

The best cheesecake!!!!!!!!!!!!!!
It says to whip the evap. milk until stiff peaks form - well it never did that - not like egg whites will do..but I whipped it for a long time.. I think that is what gives it the texture. So good!!! Try it!

This is another one that is our usual recipe we make .. very good.
Quick Jello No Bake Cheesecake
2 (8-oz each) pkgs Cream Cheese, softened
1/2 c powdered sugar (or 1/3 c granulated sugar/splenda/equal)
1 tsp vanilla
1/2 tsp lemon extract
grated lemon rind to taste, optional
Blend together above ingredients; mix in:
1 (3 3/4-oz) pkg Lemon-Jello, dissolved in 1 c boiling water
Fold in until blended:
1 1/2 to 2 cups whipped topping or Cool Whip
Pour mixture into 9-inch pie or round cake pan spread over the bottom with 3/4 c graham cracker or vanilla wafer crumbs
Refrigerate until set, at least 2 hours.
Sprinkle with additional crumbs, if desired.
VARIATIONS:
1. Use 1 to 2 8-oz cream cheese, all or part far free.
2. Use preferred jello gelatin flavors and extracts.
3. Instead of flavored jello use 1 pkg Unflavored gelatin.
4. Use about 2/3 cup boiling water and 2/3 cup cold water.
5. Fruit Filling (Cherry, Strawberry, etc.)
