Anyone have a simple and good recipe for Chili?

Busy Day Chili
Too busy to cook but want a hot, hearty meal? Try this quick and flavorful chili -- sure to please them all.
2 teaspoons vegetable oil
1 pound lean ground turkey or ground beef
1 medium onion, chopped
1 medium yellow pepper, chopped
1 (1.25-ounce) package chili seasoning mix
4 cups vegetable juice cocktail
2 (14.5-ounce) cans chili-style chunky tomatoes
1 (16-ounce) can dark red kidney beans
1/2 cup LAND O LAKESŪ Sour Cream
2 ounces (1/2 cup) LAND O LAKESŪ Cheddar Cheese, shredded
1. Heat oil in 4-quart saucepan; add turkey, onion and yellow pepper. Cook over medium-high heat, stirring occasionally, until turkey is no longer pink and vegetables are tender (5 to 8 minutes).
2. Stir in chili seasoning mix. Stir in all remaining ingredients except sour cream and cheese. Reduce heat to medium-low. Cook, stirring occasionally, until chili comes to a boil (5 to 7 minutes).
3. To serve, dollop each serving with 1 tablespoon sour cream; sprinkle with 1 tablespoon cheese.
Makes 8 (1-cup) servings.

This is what I plan on doing soon.
Crockpot Chili
INGREDIENTS:
* 2 lbs. ground chuck
* 1 cup chopped onion
* 1 green pepper, chopped
* 2 to 3 ribs celery, chopped
* 1 large (28 oz.) can crushed tomatoes
* 1 (8 oz.) can tomato sauce
* 2 cans kidney or pinto beans, drained (I would use black soy beans)
* 1 tsp. pepper
* 3 tsp. chili powder
* hot pepper, to taste, cayenne
* 1 tsp. garlic salt
PREPARATION:
In a large skillet, brown the ground beef. Drain well. Combine all ingredients in a slow cooker; cover and cook for 7 to 8 hours on LOW, or until done.
Serves 6 to 8.

Those recipes sound delicious but I have another one that's so simple even I can make it! (And it really is delicious.)
1 can of light red kidney beans
1 can of diced tomatoes
1 pound of hamburger
1 packet of Chili-O
That's it! No kiddin'! If you want to get realllly fancy, add your own onions and green peppers when you brown the hamburger. The longer I let it simmer the better it tastes and it really is delicious! lol
I put sweet sausage mixed with my hamburg! YUMMY!
