View Full Version : Side dish for Thanksgiving...

DF's mother asked me to bring a vegetable/salad/rice type dish to Thanksgiving on Thursday. It'll be a crowd of about 15-20 and ages 2.5 to 70ish. They are quasi-picky eaters....selecting store bought things over homemade (but I won't bring store-bought). I've narrowed it down to a couple dishes, and need your help.

Butternut Squash Lasagna- pretty presentation, medium amount of work, unlikely much of it will be eaten.

Homemade Applesauce- not so pretty presentation, small amount of work, most eaten

Green Salad with pretty veggies- boring, but eaten

Which would you make. I would like to make the lasagna, but since I know it'll be underappreciated and uneaten, well.

I wouldn't do the lasgna.....I don't think anyone would eat it and lasagna isn't a snap to make.

Maybe you could browse thru salad recipes online so you aren't just making plain ol' salad.

Yeah, I'll probably start looking through them now. Why does she wait until Tuesday at midday to request I bring something?

The lasagna sounds delicious but if you're not sure most of it will be eaten then maybe you should bring that to a different gathering?

You could bring a ton of roasted asparagus. It so easy to make and tastes great. (snap off bottom of asparagus, use veggie peeler to remove tougher part of lower stalk, lay flat in a baking sheet, cover with olive oil, toss around, salt, pepper & toss in 350 oven for about 45-1:00)

Some sort of veggie cassarole sounds good too.

Or how about a real simple but tasty salad like Spinach/mixed greens w/ Cranberries, walnuts & feta?

Yum, asparagus. I'll run it by Bryan. Oooooh, the salad sounds good, too. Would you use a vinegarette type dressing with that?

I have a really good (easy) corn casserole recipe that I could post. Right off the top of my head it has a can of corn, a can of creamed corn, corn muffin mix, sugar, eggs, sour cream.. I can't remember what else but it is awesome and almost always gets eaten.

Lemme know and I can post amounts. I also have a recipe for the fried apples like they make at Cracker Barrel. I made some the other night and they tasted soooo good! Easy to keep warm and easy to heat back up if necessary.

Could you please post the entire recipe for the corn casserole. I think I'm taking asparagus tomorrow, but that recipe sounds like something my family would appreciate around Christmas time. There's no rush. THANK YOU!!!
