Has a great zing to it! It's wonderful with leftover turkey. When making it last night, I also found out it's great with flax seed chips, too!

Cranberry Salsa – a la Cristeen
Yield: 5 Cups

4 c Cranberries
1/2 c Red Onion
1 Lime,Juiced
1/2 c Orange Flavored Sugar Free Syrup
2 Jalapenos – one seeded, one not
1 T Molasses
1/4 c Splenda,To Taste

[Note: This LC version tastes just like the original.]
In a blender or food processor, process jalapenos until no large chunks remain. Add the onion and process to chop. Add the cranberries (in batches if necessary) and chop coarsely (do not over- process).

Combine the lime juice, syrup and molasses, stirring to dissolve the molasses.

In a wide skillet, combine the cranberry/onion mixture and the liquid mixture. Simmer approximately 10 minutes, or until the colors are uniformly bright red. Taste and add splenda if necessary, to taste. Chill and serve.
