Is there anything you can do with instant mashed potatoes besides serve them as is?
I thought maybe use them as thickeners in soup.
I got a bunch free with coupons yesterday. I thought I could use them other ways or just donate to a food bank. I couldn't leave anything "free" there :blush:
I only use them for shepherd's Pie..

Baked in soupy casseroles, in soups as thickner.
That's about all I can think of? I've seen it used as a bottom layer of meatloaf too.

We're strange but my DH and Christian LOVE my potato tacos. I can't tell you how often they beg me to make them.
All you need is:
Mashed potatoes (make them like normal)
Corn tortillas
A package of "mexican" cheese (it is located right next to the regular cheeses but it's white, round and the package says "RANCHERO" on it. This is my son's favorite cheese and it melts nicely for these tacos).
Oil
Lettuce, tomatoes, salsa etc.
Cook the mashed potatos. Warm the tortillas in the microwave for a couple of minutes to soften (so they don't crack when you fold them). Place a couple of spoons of potatoes in the middle of the tortilla and fold in half. Place in a frying pan of oil that is over medium heat. Cook until crispy on both sides. Slice cheese and place a slice into each taco as soon as you remove from heat. Add lettuce, tomatoes or anything else you want and enjoy. My family just likes it with lettuce and tapatio salsa. Really simple and easy. I prefer them with not alot of potato in the middle. They are addicting and good after they have cooled down too. I make a huge batch and they never last. Every time my DH or Christian goes into the kitchen they have to eat one.
I don't like mashed potatoes any other way so that's all I can tell you. Good luck!
