How do you make your cracka Greek cracka cabbage rolls?
maybe like my sister's lebanese ones?
filling-- garlic, onion, ground beef, rice
cooked with butter and lemon juice? They are so yummy, I will e-mail her for the recipe

LOL.. the cracka greek cracka ones are somewhat similar to the ones Kate mentioned. I actually like mine with ground turkey instead but its usually w/ ground beef.
- blanch the cabbage leaves to soften them a bit
- mix ground beef (turkey) with rice, egg, parsley, garlic, greek spices (I leave onions out)
- put small amout of mixture in center of leaf, roll it up folding edges in
- put cabbage rolls in big pot, packed firmly together
- fill pot with water, covering the rolls
-put small pot lid on cabbage rolls to keep them from moving around
-add butter to water and cover pot, bring to boil.. then let simmer
- in blender, mix a little egg, cream of tartar, lots of lemon juice - temper with broth from pot.
- pour lemon/egg mixture over cabbage rolls, bring to a low simmer and shake pot to incorporate and thoroughly cook eggs.
- shove in mouth.
There's a greek version using tomato sauce too but I like the lemon better. My mouth actually started watering reading this. I'm so making this this week. :agree: :eat:
