I'm making meat sauce and serving it over steamed zucchini noodles. Salad too.
Artichoke chicken. I'm adding spinach for the first time. I keep forgetting every time I make it. :laugh:

i don't know. I just posted a whole week's worth of dinner's on my blog and now none of it sounds good. And we'll be home a bit late because I got in late AND we have to go pick up Dave.

Screw my dinner, I'm eating Mexican and drinking with the girls at Sheri's. I'll bring mojitos too, for some variety.
Pork steaks and potatoes (maybe) and some green beans prolly. I packed all my dishes away and actually had to unpack the pots to boil a pork butt for bbq pork sandwiches tomorrow. I found an Outback $25 gift card in my pantry so guess whats for dinner on Wednesday.
Oh shit, my hubby just said someone is sitting in front of my house....like maybe to come in a LOOK at it. OMG it is a fucking mess!!!

It's just Kyle and I this week and Kyle does not appreciate my cooking so, tonight is leftover pasta for him. Not sure what I'm having but I am taking a break from cooking.
False alarm, they were just looking or grabbing a flier or whatever. /whew
And Troy does not appreciate my cooking either. He likes about 5 things and other than that meh.

Ummmm, probably leftovers.
I made some chorizo/potato empanadas last night. Maybe I'll make some quinoa salad to get through the week. It's too hot to actually cook.

Ohhh... talk to me about the quinoa salad.
It's really simple and one of my favorites.
1 cup quinoa
2 cups chicken stock
6-8 oz. feta, crumbled
Assorted chopped veggies - I usually use one green bell pepper, one red bell pepper, a bunch of green onions, a can of black olives, some still crisp broccoli. Sometimes I throw in some chopped asparagus or red onion.
2-3 cloves of garlic crushed
1/4 cup of olive oil
1/4 cup of balsamic vinegar
-Bring chicken stock to a boil, add quinoa, cover and turn down heat. The quinoa should absorb the stock in about 15-20 mins. After absorbed, remove from heat and allow to cool.
-Mix the crushed garlic, olive oil and vinegar together and whisk.
-When the quinoa is cool, add the veggies, cheese and dressing. Mix.
- Serve!
If I'm feeling adventurous, I add some chopped or shredded chicken. It's my fallback dish for potlucks and can easily be made vegetarian or vegan by using veggie broth and/or eliminating the cheese.

:laugh: It sounded good to me, too. So, I decided to cook the quinoa that I bought last week. Instead, dumped a great deal of it on my floor. :getyou:

Fend for yourself night here. Girls had left over mac, cheese with spam, Joey had a hot dog, I had canned tamales that I made for Sean and he had my light progresso soup. :laugh:
We had teriyaki yellowfin tuna with rice.
