I'm not sure if this counts as appetizers, but lately I've been making a Capresi/Tricolore salad and that's really easy and light and summery. Fresh basil, fresh mozzarella sliced thick, tomatoes sliced thick, balsamic vinegar and olive oil, salt and pepper if you want 'em. Just layer everything in a circle on the plate - basil, cheese, tomato, repeat. Then drizzle with vinegar and oil and s&p if you want. I think you could also do these as kebabs....just use the little balls of mozzarella and cherry tomatoes, then provide the olive oil/balsamic for dipping. Have fun!

Is it going to have to sit outside?

One thing I used to make often was mix cream cheese, jalepenos, chives, and cheddar cheese, then spread on tortillas. Roll up the tortillas, chill, and then cut into 1 inch slices.

Fruit is always a good choice.

Those rollups are really good with a mixture of cream cheese and hot pepper jelly spread on them.

I always bring a veggie tray so I have something healthy to gravitate towards.

Strawberries and pineapple spears with fruit dip. Dip: 1 block cream cheese mixed with 1 container marshmallow fluff.

I love that fruit dip stuff. The couple times I have made it for parties, it's always gotten eaten. I serve it with strawberries (on sale all over the place right now) and apple wedges - just put them in a gallon ziploc with a couple of tablespoons of lemon or lime juice and give them a shake, then they won't turn brown.

 I'm about to dig in my cupboard for an old jar of fluff that I remember seeing in the way back. I hope I didn't toss it.
