:cry: We're going out of town for the weekend. Leaving Friday morning and coming back Tuesday morning. We're staying in a rental unit at a campground. I have no idea what that means in regards to supplies and cooking equipment. We'll probably have access to a BBQ, if only because one of our friends has one.
I'm having a really hard time with meal planning. :cry: Also, it's about a 3.5 hour drive and I'm freaked out about fitting everything in our van. I'm considering a trip to Costco when we get there.

I have a request for ribs, but I don't really know a good way to cook them. Usually I boil them first. :dunno: I don't think I'll have that much time. Any recipe ideas?

BTW, Austin's game was rained out in your town last night. For a second, I thought it was going to be on and we weren't prepared. I was planning on calling you to bring us blankets. :laugh: /tj
Go shopping when you get there, that's what we've done whenever we've camped.
Frozen burger patties will keep in your cooler. Brats or hot dogs are easy.

I tried, but the person there is an IDIOT. Originally I was told that all I need to bring is coffee filters and bedding. (do you think I can assume a queen sized bed? I'm bringing sleeping bags for the kids)

Fun! Dave has made ribs on the bbq...he cooked them on low heat for a few hours. They were good. I could find out how he did it if you like.
Did I tell you Hallie is NOT going with us? And that Desirae Walter is?
OH! Maggie will be SO happy. She loves Desire-who-spells-her-name-wrong. :laugh:

Yeah, most likely a double or queen.
It sounds like you'll have a fridge at least. I would just bring stuff for the first day and some staples and plan to go shopping for the rest. You'll probably want to step out into civilzation, anyways. :laugh:

When we went to the cabin, I made french toast for breakfast one day, eggs the next. We just had deli meat on tortillas (and ketchup for you-know-who :nono:) for lunches.
When we were tent camping, we also had the deli meat and tortillas. They're just easy and don't take up much space. Phillip makes a "campfire" breakfast which is ground beef, eggs, and cheese. (Kind of sounded weird to me, but really gave us the energy we needed.) I think for dinner we just had dogs because Phillip didn't catch any fish.
Maybe I should just get hot dogs and hamburgers. *overwhelmed* Ribs sound like PITA.
The last tournament was a major FAIL for me. We ended up eating every single meal out. :nono:
Oh! How about those pie irons? You could make pizzas/sandwiches with them. There are a million recipes out there.
Yeah, I need to figure out all the meals. And I'm having a really hard time getting help from the other peeps in my family. *plans salads for every meal* :nono: Except for Austin who found a lot of very complicated stuff that he wants. :laugh: He's such a good eater.

1) Burgers and Hotdogs with a simple green salad and corn on the cob
2) Barbeque chicken with grilled baked potatoes and a fruit salad
3) Kabobs (beef and chicken) with grilled asparagus, squash and zuchini and a cucumber, tomato, feta and olive salad.
4) Carne Asada tacos with black bean and corn salad
Bring sandwich fixings for lunch and eggs and sausage/bacon for breakfast.

Amy, do a google search on foil packet meals, foil packet cooking, etc. Here's one thing I found, but there's lots out there.
The biggest thing to remember with foil packet cooking on the grill or over a fire is to bring tongs.

What do you need to create a foil packet meal?
1 box of heavy-duty aluminum foil (make sure it's heavy duty, it holds up to fire and tongs better)
1 serving of meat per packet (chicken, shrimp, beef, pork, or even hamburgers can be used)
Assorted fresh vegetables (I like using potatoes or sweet potatoes, carrots, zucchini, broccoli, onion, peppers, and/or green beans)
A little butter or Olive Oil (to keep things from burning)
Salt, Pepper, and other seasonings to taste.
Preparation:
Cut the vegetables and meat into bite-sized pieces.
Using several pieces of foil, create a "pouch" to put the food into. Make sure the pouch is big enough to hold all ingredients, and all seams are tightly folded over so that your meal doesn't dry out (or get full of ashes).
Fill the pouch with the meat, vegetables, butter or oil, and seasonings. Seal up the pouch and stick it in the cooler.
When it comes time to prepare your meal, you can cook it either on a gas or charcoal grill or right on the fire. Get a good fire going with hardwoods, and let it burn down to hot coals. You can make eggs in em with bacon crumbles or sausauge, cheese burgers, cheese toasties, pizza, sloppy joe, pie filling.... on an on an on... i love my pudgie pie irons.

I was going to suggest packet cooking too. Everything right there in one foil packet.
And, for dessert, banana boats. Peel back one strip of the banana. scoop out half the banana, fill with chocolate chips, mini marshmallows, and nuts, replace peel, wrap in foil. Cook over grill or fire. Eat. :eat:

We are going camping, we just have a tent. Our menu

F: Packet cooking with taters obrien and polish sausage
S: Burgers and cukes
S: Chicken legs and mellon
For breakfast we are making bacon and eggs most of the days, we have a huge cast iron skillet, takes like 10 minutes to make everything for everyone.
