A couple of years ago, we started doing Easter at our house for both sets of parents and my brother. My brother's a vegetarian, I don't like lamb or ham, Alex's mom has a ton of weird food allergies (no wheat, soy, or dairy), and roasts are more of a Christmas thing...so we started doing non-traditional.

This year is gonna look like this:

Appetizers
Deviled Eggs
Hummus
Pita and corn chips
Olives
Stuffed grape leaves

Dinner:
Pita bread
Falafel
Kofta (http://www.grouprecipes.com/59348/authentic-egyptian-kofta.html)
Greek marinated (http://www.recipezaar.com/Greek-Marinade-28150) chicken skewers
Greek style rice pilaf (http://www.recipezaar.com/Pilafi-Me-Throumbi-greek-Savory-Rice-90242) (I will use veg bouillon instead of chicken)
Veggies (maybe grilled veg skewers, with mushrooms, grape tomatoes, and zucchini)
Hummus/feta/tahini/tzatziki to dress sandwiches with

Dessert:

Probably a key lime pie

We'll surely have ham. And Jane's delicious southwestern scalloped potatoes. And asparagus. Or roasted broccoli and cauliflower. :laugh: Maybe dessert will be a surprise. :laugh:

I will be making/bringing nests. I already got a reminder call from Cory. :laugh:

Our Easter meal is at 1am. :indiff: I'm sure we'll have lots of meat and goodies....but, it's not so enjoyable when you just wanna sleep.

I think we will have ham and taters. Rolls, maybe some banana cream pie.

Kelly...the Greek meal looks great! Yummy and good for you...

I have no idea what we'll do...we'll most likely be in the car a good portion of the day.
