I made this recipe http://www.recipezaar.com/Moroccan-Chickpea-and-Eggplant-Aubergine-Stew-123769 last night and it was excellent. The only changes I made were to use 1tsp of cinnamon and to add some Chipotle chilli powder for some heat. I served it over couscous. Rich's comment was that it was excellent.
