I never start this thread, but since I already have dinner going, why not?
I've been perusing this website: A Year of Crockpotting (http://crockpot365.blogspot.com/2008_08_01_archive.html) thanks to Lisa (I think).
I've got the Coq Au Vin Chicken in the crockpot. It smells good, I hope we like it!
I think tomorrow I might try making the Coconut Beef.

Chicken and Dumplings!
Ingredients
* 1 1/2 pounds chicken breast tenders
* 1 tablespoon olive oil, 1 turn of the pan
* 2 tablespoons butter
* 1 russet potato, peeled and diced
* 2 medium carrots, peeled and diced or thinly sliced
* 1 medium onion, chopped
* 1 rib celery, diced
* 1 bay leaf, fresh or dried
* Salt and freshly ground black pepper
* 1 teaspoon poultry seasoning, 1/3 palm full
* 2 tablespoons flour, a handful
* 1 quart chicken broth or stock, canned or paper container, preferred brand Kitchen Basics
* 1 small box biscuit mix(preferred brand Jiffy Mix)
* 1/2 cup warm water
* Handful flat-leaf parsley, chopped
* 1 cup frozen green peas
Directions
Dice tenders into bite size pieces and set aside. Wash hands.
Place a large pot on stove over medium high heat. Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently. Season mixture with salt, pepper and poultry seasoning. Add flour to the pan and cook 2 minutes. Stir broth or stock to the pot and bring to a boil. Add chicken to the broth and stir.
Place biscuit mix in a bowl. Combine with 1/2 cup warm water and parsley. Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly. Cover pot tightly and reduce heat to medium low. Steam dumplings 8 to 10 minutes. Remove cover and stir chicken and dumplings to thicken sauce a bit. Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.
I LOVE chicken and dumplings. I never add the veggies though. And, add just a smidge of cinnamon. Sounds weird, but it is delish.

We are having sausage and white bean soup thanks to Phoebe (I think...or was it Lisa :hide: ).
Lisa doesn't do beans, probably Pheebs. :D
sweet potato and chickpea stew. Also from the crockpot! Guess its just that kinda day :D

I have a hankering for cornbread dressing and I need to practice making it again before Thanksgiving, so I may whip some up after I put the kids down. I should make some cornbread now. /lazy
And, who knows what we'll eat with it. Chicken? green beans?
Leftover porkchops with some veggies. Maybe cabbage and some squash/onions.

I have a plan...
Cream of Mushroom Soup (doctored up with garlic powder and herb seasoning) poured over 4 half breasts of chicken. Baked at 400 for 30 minutes. Served with corn or peas and mashed potatoes for the kids and cauliflower for me and Glenn.

We ordered Chinese. My General Tso's chicken was kind of gross and gristly. But I had soup and dumplings, so I am okay even though I only ate like 2 pieces of chicken. Meh.

I just got a Fully Loaded Box from KFC - a drumstick, 2 chicken tenders, string beans, spicy fries, 2 biscuits, and a buffalo snacker sandwich. It sucked.

I couldn't go to the store. :indiff:
So I had one type of meat in the freezer...ground turkey.
We had turkey meatloaf :eat:, crash hot potatoes and green beans.
I love those crash hot potatoes. We had them for the first time last week and I used the leftovers to doctor up a batch of Bear Creek creamy potato soup. So, so yummy!
