I'm in a lunch rut.

Every day at lunch time I'm all :scratch: :confused: and Aoife and I end up eating some processed crap that I can make quickly. I'm so tired of pb&j, grilled cheese, and lunchmeat sandwiches.

Any ideas?? I want it to be healthy, toddler AND adult friendly, pretty fast to get on the table (but I wouldn't mind taking time to cook a batch of something that I can nuke quickly later)......uh, and no salads...I don't do raw vegetables. *bleh*

How about some crock pot soup you can make in big batches and freeze?

Chili (beef and red bean) or (chicken and white bean), chicken veggie, ham and bean, etc.

We also do yogurt for lunch sometimes. with raw carrots as a sidedish

This isn't really healthy but it's yummy.

roll up a 1/4 slice of cheese and a small piece of ham in crescent rolls and bake. I could eat a whole batch myself.

We have pigs in blankets about 1x/month. I freeze the extras for the following month. But that would be a bunch of processed crap :blush:

How about some whole wheat pasta with parm and butter or pesto

Homemade chicken salad (with grapes in it :eat:)

I second soup, we eat soup all the time. Progresso is yummy and one can is enough for me and Joey with a few crackers.

My kids love it when I let them make pizzas out of english muffins...buy jarred sauce and mozzarella, whatever toppings you want, sauce up the muffins, spread the toppings, stick under the broiler until brown and bubbly and enjoy. Aiofe could "help" put the toppings on!

Skillet quesadillas - Cheese and leftover chicken/beef/pork, a touch of salsa, a little more cheese between two tortillas, spray frying pan with Pam type stuff, put the tortilla 'sandwich" into the pan and let brown, flip, take off when cheese is melted, cut with pizza cutter and share (dip into guacamole or sour cream or more salsa etc)

Omelets are fantastic and easy (think someone mentioned these above)

Frito pie....chili with cheese, fritos, green onions and sour cream (canned or homemade)

Fruit salad with cheese wedges and crackers/melba toast

Cottage cheese with fruit or cottage cheese with tomatoes (if you like them), olives, green onions and salami

pesto and pasta (you could use dreamfields)

'cowboy' dinners - we used to have fun making them with mom - and you can make them ahead - and then just pop them in the oven (burger patty, potato slices, carrots - whatever you want really - inside a piece of foil - toss them in the oven and bake on 400 for like 30 minutes or so)

LC tortillas with cheese (i like pepper jack but that may be too spicy for a little one), you could do grapes or berries as a side.

I used to love creamed tuna on toast :blush: - it was favorite childhood thing - but i don't think it's too nutritionally fabulous.

a big pot of stew or soup that you break down and freeze in zip locks comes in handy too.

We loved 'helping' make homemade pizzas when I was growing up - those are so much easier with Boboli :D
