I am hosting a baby shower in a few weeks and I am planning on making mini quiche as one of the dishes. I'd like to have a couple or several different types. Do you have a favorite quiche recipe or favorite ingredients?

This is super fast & easy & freaking good, everytime I make it everyone licks their plates!

Olive oil spray a 9' glass cooking dish, preheat oven to 400.

In the dish assemble sliced cured polish sausages (not the raw kind), small hunks of sharp cheddar cheese & a couple of cups of the frozen stir fry veggie mix (whatever kind you like)
Whisk 6-9 eggs with a dash of water, a tsp of salt & pepper and pour over the veggie & meats. Top with a dash of cayenne pepper or garlic powder or paprika. Pop in the oven & cook 35-45 minutes depending on your oven. The center should be moist but not gooey.


I also make this version with fresh chopped onions & bell peppers :swoon: Especially terrific if you can carmelize the onions first YUM. Use a milder cheese like swiss or provolone with this one.

My favorite is good old quiche lorraine with cream (or half & half) spinach, bacon, swiss and parmesan cheeses. I add salt, pepper and onion powder for seasoning.
