View Full Version : What could you have with burritos?

We don't eat rice (DH doesn't like it and it's not LC), so we usually don't have a side when we do fajitas or burritos. Should I get some Spanish rice as a side? Black beans and rice? (I've never made those before.) I don't know what my guests would like.
TIA. :D
Can you get those already seasoned in a can?

Black beans are easy to season.
I just dump the can in a pan, add some garlic and salsa along with some cumin and chili powder. Heat until hot. /easy peasy
AND, the easiest spanish rice is the Uncle Ben's 90 second microwavable pouches. They make like 4 big cups or something.

My friend Kate makes fabulous faux refried beans out of black beans. She mashes them up a little and adds fresh cilantro to them. :eat:

My MIL makes an amazing, authentic mexican rice. I'll post the recipe. FIL and Bryan aren't big rice fans, but they devour this.
Rice, black beans made the way Ange makes them, and chips/salsa/guac would be perfect. Throw in a green salad tossed with ranch mixed with some taco seasoning if you need a salad.

If you have a Trader Joes, they make a killer corn salsa. You could just do something like that and add a can of black beans to it. I do that a lot to eat on tacos.

These guys don't usually eat salad. Trust me. But rice and beans would work.
