Mac...No, it ends up being very savory/spicy. Not sweet at all. I wish I had some french bread and roasted garlic and salad to go with it.
Five stars in my book!
Perfect fall day soup.
Pumpkin and Sausage Soup
2 c mashed pumpkin (1 15 oz can)
4 c. chicken broth
1/2 c. minced onion
1 c. finely chopped mushrooms
1/2 c half and half mixed with 1/2 c water
1 clove garlic, minced
1 T Italian Seasoning
1/2 pound spicy sausage
Brown sausage, drain, and then add the onion, garlic and herbs. When the sausage is browned, stir in the pumpkin. Stir in the broth and mix well. Simmer 20-30 minutes. Stir in the milk and simmer on low another 10-15 min. Taste and add salt/pepper as needed.
It tastes nothing like you would expect it to! I use Bob Evan’s hot breakfast sausage, and it is nice and spicy. Really hits the spot.
I make it all the time. I really :love: it. I even send it to school in a thermos.
I sometimes make a lower fat /calorie version.
I would love a bowl now.

I really, really love this soup. It's so versatile. If you don't like mushrooms, don't add them. You can make it lowfat by using turkey and lowfat milk. I don't remember where I got this reciepe (I *think* from another LC board I used to frequent). I'm going to add some leftover eggplant to mine tonight.
It's not sweet AT ALL, Mac. With so much Italian seasoning, it's very savory.
I usually make carbquick cheddar bay biscuits with it.
Add a salad and it's a great lunch or light dinner!
It also freezes very well. I make a huge pot and portion out several cups. When I want to take some to work, I take it out of the freezer the night before and by the time it's ready to eat, I just pop it in the microwave and voila!

Pl - just don't tell him what it is. One wouldn't know it was pumpkin. All the pumpkin does is make it creamy.
Splenda - I use Hot/Spicy Bob Evans (the only breakfast sausage I've found that does not have sugar) simply because it's easy. I suppose you could use link sausage, but would have to take the meat out of the casing.

Yes. My sweats and ballcap clad self trudged to the store for 'shrooms, even though I was there for an hour this morning.
Nat, I used spicy sausage in the bulk roll pack.

Use any cream type thing (even milk - if you're into that). Cream will just make it a bit thicker - which isn't a bad thing!
Mince an onion (this isn't really what I do - but you'll find your groove once you become comfrtable)

This seems really easy. I can't cook. I'm gonna try it. I'm glad you don't have to tear into a real pumpkin and dig all the crap out. I'd skip it then.:killingme *lazy*
But Martha Stewart would suggest serving it in hollowed out baby pumpkins.:jack: Too. Much. Work.

It is very good. A little bit different at first but good.

i've been wanting to try pumpkin soup for a while...that recipe does sound good. Picked up a can of pumpkin on saturday- was going to make pie, but now i'm wondering if i should just go ahead and give this a whirl....decisions decisions....pie or soup? :p

and, when we have something that I serve bread with, they are only allowed to have one slice. Unless they are actually eating the main dish. Like Austin tonight had 3 slices of bread to dip in his soup. :eek:
Phoebe/Amy... does canned pumpkin work best, or can a pie pumpkin work, too? I ask because I made a pie pumpkin for Alison last week and it seemed bitter. Not sure if canned pumpkin is, too?

This is exactly me, too. I refuse to run a resturant.
It's funny that I never opened this thread cuz I thought 'pumpkin and sausage...meh'...but now, after reading all this, I think I'm going to make it tomorrow! :D

Lizz, I haven't had the soup, so I don't really know, but my guess is that it would only work with sausage. :dunno:

Lizz, I dunno if it will fly with anything besides sausage, and I don't even know if it would be quite as good without SPICY sausage.
It's the whole flavors playing off each other/balancing out thing.

I think I'm gonna make a triple batch tomorrow and bring some over to my mom and sister. They are both having financial difficulties and would probably enjoy a pot of soup. mmmmm....maybe I'll bake bread too (from frozen bread dough :D, cuz I have no real domestic skills).
Would you believe that we don't have any leftovers? :mad:

Funny! Tomorrow I'm getting stuff to make that too. I lurve the idea of smoothing out all the veggies so my picky kids won't know that they are there.

I would serve a salad and lc bread with a meal particularly if I wasn't sure they would eat what I made... so at least there is something I know they will like and eat. It gives them a way out without me making a second meal, which I refuse to do, as well as balances the meal.

Yeah, an actual pumpkin. They are small (like the size of a grapefruit or canteloupe) and have a sticker on them that says "pie pumpkin". More edible than those carving pumpkins.
YOu could do that Dar. It just would be a lot more work.
Slice it open, take the seeds out, cook it in the oven for an hour or so. (till fork tender), let it cool, scoop it out then put the pumpkin through a food mill--if you don't have one of those then push the "goop" through a sieve (just to remove the fibrous strands) them measure it out to = a big can of pumpkin.

Just curious. I made a pumpkin for Alison last week. Squashes are all on sale right now.
Probably still cheaper to buy it canned, but sometimes it is fun to make from scratch.

Something like this would be a great alternative. :)
Pumpkin Bisque
2 lb (approx.) baked fresh pumpkin (baking softens it)
or 2 16oz cans of pumpkin puree (save time and labor)
4 cups chicken or vegetable stock
1 large yellow onion, diced
3 garlic cloves, crushed
2 tbs your favorite curry powder
1/2 tsp salt
1/2 cup soy milk , could use half and half
1 lb mushrooms (shitake are a great choice, but button mushrooms
are a good low-cost alternative - do not use canned), clean
and tear into pieces
fresh cilantro
nutmeg
1. In a large sauce pan, mix together the pumpkin, stock, onions,
garlic, and spices.
2. Heat to slow boil, boil until the pumpkin is very soft (this can
take a while). Puree until smooth.
3. Add mushrooms and milk. Garnish with a sprinkling of nutmeg and a
few cilantro leaves.
Serves 8.

I made the original recipe tonight (well almost) and it was excellent but as I was making it I thought to myself that curry would be good in this. I will try your recipe next. Thanks for posting it.

Italian seasoning is "spices including oregano and thyme"

I am debating making it as well.
I made it last year and I ate it for dinner that night and lunch the next day and then I couldn't it eat anymore. :( Something just wasn't clicking after the 2nd bowl.

I have to share what I'm about to try... I never put the half-n-half in last night and I thought it was still tasty! I added extra seasoning in addition to the Italian seasoning. I used about a teaspoon Thyme. YUMMY! Tonight I'm going to take the leftovers and add some Alfredo Sauce to it and serve it over spaghetti squash.
ETA...
It was so yummy with the alfredo and the squash! I would make this again!
