It's kinda hard to eat cheap on LC, we all know that.

What I'm looking for...is say, something to make when you're trying to stretch the budget that week (say, because of a certain way too expensive Chuck E Cheese trip)

I mean, a soup would be good, I guess. Any suggestions?

What's on sale this week? Do you have a freezer?

Chicken is. Amick Farms is 1.98 a lb at Kroger. I also already have chicken in the freezer.

I don't seem to keep much in the freezer...NO vegetables, I've always hated frozen vegetables (except corn) but I think I might change my ways on this one. Cauliflower frozen isn't too bad...especially when made into soup.

That Red Bean and Bacon soup recipe that Beaker posted last week still has me salivating. I guess it's not technically atkins friendly, but I don't know how strict you're wanting to go.

Crackslaw, as previously mentioned.

Chicken salad or soup "ala Kirsten" made from a rotisserie chicken.

Deli meat -> meat and cheese rollups or a chef salad.

Eggs -> hb egg, egg salad, scrambled with cheese & deli ham or mushrooms or anything you like

Stock up on what's on sale and put it in the freezer.. pork steaks, chicken, etc. Have with a side of frozen green beans or a salad.

I wouldn't freeze vegetables, especially if you don't like them. But def. buy meat and freeze it when it's on sale.

Just to give you an idea of how I operate...

All my deals are at Tom Thumb this week:

10/$10 items:
Oscar mayer hot dogs (freeze)
Fresh express salad (may have a coupon for that woot!)
Carrots
Zucchini
Broccoli
Tomatoes
Onions
Pepperoni

Then:
Chuck roast 1.99/pound
Turkey breast 1.99/pound
Beef back ribs1.69/pound or pork spareribs 1.99/pound
Whole chicken .69/pound (only I won't actually buy this cause I don't like the dark meat but it's still a good deal)

I have chicken, steak and some roasts in the freezer already. All the pot roast veggies are on sale so I need to cook one of those, I usually make soup out of it the next day. Lettuce and pepperoni plus cheese and creamy italian dressing and other salad veggies make a good main dish salad. The zucchini roasted would be good with the steaks I already have and some salad.

Kroger is pretty much all I have. Well...Farmer Jack. But, they do have the chicken sale and Bacon is BOGOF, so that would make a nice soup with something else.

I noticed that CVS has a deal where you buy $20 of stuff off of their sale page and get an extra $10?

Stuff chicken breasts with random combination of cheese, veggies, and meats.

Here's a original Layla recipe. I also do the same thing, but stuff with creamed spinach. (You can omit the rice and even the breading if you wanted to be strict.)

LAYLA'S RICE STUFFED CHICKEN CORDON BLEU

Ingredients:
4 boneless skinless chicken breasts
Thinly sliced ham - 4 slices
filling:
2 cups brown rice (cooked)
soft bacon pieces (I used the jarred kind) 1 Tablespoon
white cheese (I had provolone) about 3 sandwich sized slices
yellow cheese (I had colby) about 2 sandwich sized slices
cream cheese 2 Tablespoons
milk - 1/4 to 1/2 cup
thyme - about 1 Tablespoon
red pepper - 1/4 teaspoon
chopped garlic - 1 teaspoon
Lawry's season salt, salt and pepper to taste
coating:
cracker or bread crumbs - 1/4 to 1/2 cup
parmesan cheese - 1/4 to 1/2 cup
thyme - 1 teaspoon
Lawry's season salt, salt and pepper to taste

Pound chicken breasts flat.

Combine coating ingredients and coat one side of chicken breast throughly. Place one slice of ham on the uncoated side of the chicken.
Combine filling ingredients and place a few heaping spoonfuls on the uncoated side of chicken breast and fold over. Place in a greased casserole dish. Do this will all the chicken.

Place remaining filling mixture around the chicken in the dish and top with crumbs.

Bake at 375 until the chicken is no longer pink.


Also, my chicken soup:

LAYLA'S CHICKEN AND VEGGIE SOUP

Note: This is more of a WW or BFL recipe, to make it lowcarb, omit the potatoes and the carrots and add some different veggies.

Also, I don't measure, so I'm doing my best to estimate the amounts.

Ingredients:
1 to 1.5 lbs of boneless, skinless chicken breasts
1 carton of chicken stock
1/2 cup of diced onions
1 cup of diced carrots
1 cup of diced celery
1 cup of diced potatoes
1 T olive oil
2 T rosemary (dried)
2 T thyme (dried)
1 T ground black pepper
2 to 3 bay leaves

(As always, adjust seasonings to taste, but you shouldn't need any salt because the chicken stock is salty.)

Poach (or boil) the chicken just enough to cook it through. Cool if off by soaking in cold water for a few minutes, then "shred" or tear it apart into little pieces. (If you're lazy you can just cube it and throw it into the soup raw and it will cook there, but you may get "Chicken Floaties" and I don't think it is as good.)

Put a big pot on the stove and heat up the olive oil. Saute the onions, carrots and celery. When the onions starts to get translucent, add the potatoes. Saute for a few more minutes.

Add the shredded chicken and the seasonings. Stir well. Add the chicken stock. Now let it cook (around 30 minutes?) until all the veggies are soft and delicious.

That's it!

Layla's chicken veggie soup is YUMMY.
