RECIPES

Chicken Cacciatore

1 pkg frozen chicken breast partially thawed
1 medium green bell pepper, sliced
4 oz can sliced mushroom, drained (optional)
1 small onion, chopped
8 ounces of linguine
2 cans (14.5 oz) Italian-seasoned diced tomatoes
1 garlic clove

Cut chicken into strips.
Cut up bell pepper and onion.

Cook chicken over medium heat in a skillet with 1 tsp. olive oil
Add tomatoes, bell pepper, onion, garlic and mushrooms.
Bring to boil. Cover. Reduce heat; simmer for 8-10 minutes.
Serve over hot linguine.











Chicken Noodle Casserole
2 cups uncooked medium egg noodles
½ cup chopped onions
1 TBSP butter
1 can cream of celery soup
½ cup milk
S & P
1 cup chopped cooked chicken
½ cup thawed frozen green peas
½ cheese

Cook noodles in 2 quarts salted boiling water. Sauté onions in butter. Add soup, milk, salt and pepper. Stir in chicken, peas and noodles. Pour into well-greased casserole and top with cheese. Bake at 350 for 30 minutes.

Freezes well.










Chicken Tortilla Bake
3 cups shredded cooked chicken
1 can of chopped green chilies
1 c. chicken broth or stock
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 small onion, finely chopped
12 corn tortillas
2 cups of monterey jack cheese
In a greased 13 by 9 pan, layer the tortillas,chicken mixture and cheese. Layer twice.
Bake uncovered at 350for 30 minutes.












Goulash (Italian Style)

2 c elbow macaroni
1 lbs. ground beef
½ lbs Italian sausage
30 oz jar of spaghetti sauce
8 oz. shredded mozzarella cheese

Cook macaroni according to package.
Cook ground beef and sausage.

Drain pasta and meat.
Add all ingredients in stock pot and cook over low heat. You can serve immediately, but it tastes better if you let it simmer for awhile.

You can double or even triple this recipe to serve a large crowd. Great left-over.










Meatloaf


1 lbs ground beef
1 sleeve Townhouse crackers
8 oz. tomato sauce
1 egg
½ green bell pepper, finely chopped
½ onion, finely chopped

Mix all ingredients, saving a few tablespoons of tomato sauce.

It is best to use your hands to mix.

Put in loaf pan or 8x8 Pyrex. Pour remaining tomato sauce in stripes along top.

Bake at 350 for one hour.
Yummy leftover.










Scorched Rice

(serves 4, I always double)

1 stick butter
½ green bell pepper chopped
½ onion chopped
1 c rice (regular not minute)
1 can cream of mushroom soup
1 c water
1 tsp chicken base
S & P
Mix water and chicken base to make stock
Melt butter in skillet
Sauté onion and bell pepper
Add rice
toss until brown over medium heat
Add stock and soup
Stir well
Bring to boil
Turn on low
Cover and simmer for 20 minutes

Well, there were also some issues with her selling stuff that she forgot to mail out. I'm not sure whether that got resolved to everyone's satisfaction or not. They took away her pink dot. :indiff:

Wed - Leftover Bf stew from freezer (scouts)
Thurs - Crockpot chicken and rice something or another
Friday - Hamburger Helper
Sat - Pizza Night
Sun - Appetizer night (Wings and fries and stuff)

Mon - Baked ziti
Tues - Soup and Sammiches
Wed - Breakfast for dinner
Thurs - Leftovers :dunno: Ziti or Stew or Chk and Noods

Hey, you guys know you can find Mastercook, a software program that stores your recipes, lets you plan meals, creates a shopping list, then print out menus, shopping lists, and recipes for about $5 bucks at a Big Lots/job Lot, right? It's version 7, and they are currently up to 9, but they really haven't made any worthwhile changes in a long time.

ETA: Back off, MO! I saw her first! :right:

OMG! Find an hour to yourself (yeah right), and load your recipes. You can even export your shopping list to a PDA. The only problem is that you really do need an hour to get it up and running with useful stuff.

Here's an example of very simple output. You can do much more with the program, especially with print-outs. It'll generate a shopping list, the recipes, and a menu to post on the fridge.

Chicken Mole

2 1/2 lbs chicken pieces -- skin on
15 ounces chicken broth -- canned
2 ounces canned diced green chiles
15 ounces artichoke hearts -- drained (I use Polar brand)
2 medium vidalia onions -- peeled and quartered
1/2 cup fresh parsley -- chopped
6 medium fresh tomatoes -- quartered
4 tablespoons butter
1 cup frozen corn
1 cup water
1/8 teaspoon adobo seasoning
1/4 teaspoon ground black pepper
1/2 teaspoon table salt
1 tablespoon mole -- mexican condiment (paste)
1/2 cup raisins (optional)
Mash up the mole paste in the chicken broth until it is mostly dissolved.
Place all ingredients in a large crock pot and set on high setting for 1 hour, then reduce to the low setting for six more hours.
Serve chicken and sauce over cooked rice or cooked egg noodles.
