View Full Version : Help me pick some veggies to make LC soup
I'm going to the farmer's market. What do I want to get besides green beans & celery? Do squashes (yellow, zucchini) hold up in soup? Asparagus? Cabbage?
When I make veggie soup I throw EVERYTHING in.
I halve brussel sprouts, lots of green beans, aspargus (but watch this one-- it is strong and flavors the soup), cauliflower, broccoli, onions, leeks, mushrooms, all in a beef or chicken broth.
I serve it really hot and melt a handful of part skim motzerella on top of each bowl.

If I added squash (not my favorite) I would do it close to the end, it would ge smushy fast.

How about canned tomotaoes? (though you wouldn't get those from the market)
yes, they are strong, I just throw a bit in.
My sister calls it my "garbage soup" because I open the produce drawer and the freezer and throw it all in.

I add some carby ones too-- carrots and pinto or red beans-- but I wouldn't miss them at all if they were gone.

And I am interested in this too b/c if I have soup on hand, I can bring it to work.
toamtoes would be good too-- except I hate tomatoes :)

definately cabbage!
i just made chicken/vegetable soup the other day ~
i used rotissery chicken (lazy), chicken broth, cabbage, celery, fresh mushrooms, green beans, and added some egg drop ~ more water and some chicken bullion as well. it was YUMMY!!

nope, but you can still buy it frozen. I use frozen 95% of the time

Oh - radishes give soups a startchy feel.
I've never been a fan of radishes. I know you girls metioned eating them cooked, and I have yet to try it.
Pickings were a bit slim at the market, but I got green beans, celery, asparagus, squashes, and cucumbers (which of course won't go in soup :laugh: ). I have mushrooms and onion at home. The cabbage didn't look too good.
What do you guys do for broth? Make your own, canned, cubes that you add water to?
Explain the egg drop part to me. Do you shake up the egg and drop it in?
The last time I made soup, I just used the boullion cubes and let it all simmer for a while.

Mo - for the egg drop part, put a couple of eggs in a small bowl, whiskwhiskwhisk, then drizzle the egg slowly into the hot broth while stirring. When the egg hits the hot soup, it cooks. The stirring makes the egg ribbons.
Dar, I have a cabbage that I bought and have no clue why or what for. Want it?

Our crisper drawer keeps veggies good FOREVER. It is like another dimension.
They will go bad, eventually.
My chicken veggie soup has chicken (duh), carrots, potatoes, celery, green beans, garlic, onion, thyme, rosemary, and a bay leaf.
And chicken stock, for that all day flavor. [/rachel ray]

Did you put a lot of asparagus in?
No, just a few stalks. There's green beans, celery, asparagus, and mushrooms. I couldn't handle all the green so I added corn and yellow squash.
And some onion and it's in a beef broth.

:eat: I was DREAMING about veggie soup last night :nono: So we're all on the same wavelength :D I was at the farmer's market getting fresh veggies, but weird ones to make soup. Like parsnips, turnips, spaghetti squash, shallots, rutabagas, spinach, fresh garlic....
