I'm thinking about making Moke's stuffed peppers. Conn wants pizza, but I'm trying to eat a little healthier these days.

I have no food in the house so I have no clue. I really feel like eating spaghetti but I will probably just have some food I brought back with me.

We're having homemade lasagna w/spinach-artichoke salad and a baguette (note that baguette shows up every friday night--it's our appetizer)
Terri-make a healthy pizza! We usually make ours with a thin crust, chicken boob that I've marinated and pre-cooked, fresh tomatoes instead of sauce, artichoke hearts, whatever other veggies we find in the refrigerator (broccoli, whatever...) and then a light dusting of cheese and some herbs on top. Yummy. now I want pizza for dinner. and if you don't feel like making fresh pizza dough, there's always jiffy...they actually make a pretty good pizza dough.

Maybe you could do an Italian-style pepper instead of a ranch pepper. Use pasta sauce instead of ranch and maybe crumbled Italian sausage instead of Jimmy Dean, and then add some pepperoni and whatever other veggies and seasonings you like (oregano, garlic, parsley, etc) and top with mozzarella cheese. It's not pizza, but has pizza ingredients.

MA just described a variation that I did on Moke's pepper's.
I cooked Italian sausage, put it in a half of a pepper, added some spaghetti sauce and a few sliced mushrooms then topped with cheese and baked.
I think that is my dinner for tonight unless I decide to make the lettuce wraps.
