I'm going to make faux potatoes or whatever you want to call them tonight, but I've never done it before. Is the texture going to be weird? Do I smash the cauliflower up into oblivion, or leave it flowery? Any suggestions?
The pics on Linda Sue's site are not appetizing, though I'm sure they taste good.

Mash them with a fork. They will be a little "lumpy." Whatever you do, DON'T attempt to puree them in a blender or food processor. Trust me. And if you don't trust me, ask Red, she will back me up on this. No food processing!
I like them best with baked potato toppings - butter, cheese, sour cream, etc. - and only mashed up a little (more like chopped than mashed).

As long as you don't expect them to taste like potatoes you shouldn't be disappointed.

You have to cook it first (but not until mushy), then let it sit in a colander until almost cool. If you process it hot, it will make mush, though.

I've never successfully had mashed cauliflower. I think one of the important factors is squeezing the moisture out after cooking / before mashing. Though this is just speculation...
I absolutely LOVE a bag of cooked cauli w cheddar/mozz chz melted on top. Then dip in sour cream. Yum. Sometimes I add chives and cooked bacon. I could eat cauli daily and do have it at least 2-3 times weekly. :D
How did your faux potatoes turn out?
:dunno: I use my food processor and it works great. I nuke them, then puree them into oblivion with some sour cream, cheese, butter, and ranch powder. Then bake with more cheese on top. :eat:

They turned out great! I used frozen, microwaved it, cut it up into small pieces, stirred in sour cream, butter, cheese and cut a bunch of fresh chives. Deeee-lish!
