We are having Mexican lasagna, spanish rice and fiesta corn (corn with red and green peppers, red onion and chilis).

Richard won't be home until 9-10 o'clock - so we're just going to have a gigantic salad with juicy tomatoes, onions, cucumbers, avacados, hard boiled eggs and bacon. I need something healthy after this weekend.

Anyone have a kickass dressing recipe?

Oh, Ok. Then just take some vinegar, oil, spices of your choice and whisk.

I bought a whole chicken and had it cut in half. Don't have a clue what I am gonna do with it.

Phoebe, you like hot bacon mustard dressing? Since you are having bacon on your salad, take the 2 tablespoons of the hot drippings (if you are cooking your own), mix with 3 tablespoons of yellow mustard and a splash red wine vinegar....Mix well and voila!

Yeah, I definitely would tweak it too because I have dairy issues but it made me realize that I like a little more fat that SB allows me. I have eaten breakfast, a snack and lunch and I'm STARVING.

I love the first recipe, but I haven't tried the second one yet. I would tweak it too - that's WAY TOO MUCH cheese, IMO. I'd probably drop the whole thing down to a little less than a cup at the most. I'd cut back the cream and chicken too though.

The sundried tomato chicken recipe sounds awesome! I will definitely have to try that sometime, maybe tonight. I saw a recipe for ravioli on Paula Deen's show and am tempted to try that tonight. But dinner isn't set in stone yet. All I've figured out is that I will be cooking.

The biscuits are still a go, but I need to rethink the entree because the pan caught fire and ruined the raviloli. I'm thinking Costco pizza.

I think I might make Heurovos Rancheros (Ranch Hand Eggs)

My version:
Cook up some black beans w/ chipotle
Fry up tortillas
Cook some eggs over easy, top with salsa and cheese.

Layer of beans on tortillas, top with eggs. :eat:
