I need to go grocery shopping tonight. I need some ideas. Anybody up for menu brainstorming? I want to stay low carb-ish.

Do you like stir fry? I made one last night that was SOO easy and LC. I used SF orange jelly to help sweaten it.

Brats
Tacos
Chili

Fajitas w/ romaine lettuce or lc wraps.
Bunless burgers, buns for the kidlets.
Beef Stroganoff, noodles for the kidlets.
Grilled chicken with sauteed shrooms and melted cheese.
Chef salad.
Crack slaw.
Keilbasa with cabbage or mac n cheese for the wee ones (one of my fav fast meals when younger).
I second fajitas. That's what I'm having. :D
I made a roast in the crockpot but I'm craving Mexican and yet, I've never been to a Mexican restaurant. :dunno:
I had Taco Bell in Jamaica once and HATED it. I just don't think that counts but it was enough to turn us off from trying anywhere else. Yet we eat out A LOT.

I don't measure when I cook. Its my grandmothers fault. :love: Anyway, everything is my best guess. The only thing I am sure about is the amount of jelly I used.
I used just enough olive oil to wet the bottom of a LARGE frying pan. I threw in the hard veggies first, like the carrots, green peppers, onions and let them cook for awhile, then threw in the broccoli, cali, shrooms and water chestnuts. After they meshed for about 20 mins, I tossed in thin strips of pork tenderloin and shrimp. After they were cooked, I added the sauce. Its a add-what-you-like type of dish.
For the sauce I used soy sauce maybe about a 1/4 of a cup, maybe about 2 tbls of teriyaki sauce, about 2 to 3 drops of liquid smoke and a half a jar of SF orange marmalade. Stir until the jelly is mixed up. Then I added about 2 or 3 tblsps of water and poured it over the goop in the pan. Let it simmer for about 10 mins. Dipped it out and added seasame seeds on top. Even my picky 4 yo liked it.

I think I would shrivel up and die if I didn't get my weekly fix of Mexican food. PUHLEEEZE don't let Taco Bell turn you off from some of the best food out there.

Whyyyyy is Trader Joes so far away???? :cry: Maybe I'll plan a trip that requires me to drive near it.
I know Taco Bell isn't authentic Mexican but it still turned me off. We are going to the best Tex-Mex restaurant in the area tonight. :dance:/threadjack

I haven't. I forgot that there is a new TJs in Tacoma. I wonder how close it is to our co-op.

With the anchovy paste? Chicken lettuce wraps with ceasar dressing. It's in the kids cookbook, so I don't think I'll be the one making it. :right:

I make taco salad for myself A LOT. The family can have soft tacos and spanish rice.
You don't need to buy the taco seasoning...just use chili powder, cumin and garlic powder. No carbs. Taco Bell hot sauce also has zero carbs.
Throw the meat, cheese onions and tomatoes on top of some lettuce, add some sour cream and taco sauce. Yum.

Or I use canned chicken....cook it up in a pan to warm it, add some cheese and taco sauce. Put it on top of a salad. Same thing. Soooo good. Add some avacados and sour cream.
This is the only thing I use canned chicken for, btw. Good deals on it at Costco.

I think Costco's canned chicken is better quality than what you can find in the store too.
I chop mine up, mix it with dill relish, mayo, garlic salt & chopped celery and throw it on top of a salad.
That sounds doog. I just need to get to costco and get some. It's too expensive at the regular grocer.
I can throw down on some taco salad during induction.

Oh..and one time I took leftover rotisserie chicken, shredded it a bit and threw it into a pan. Mixed it with 1 oz cream cheese, hot sauce and some green chilie sauce. It was like a creamy enchilada w/ out the shell. I threw that over a salad and didn't even need to add dressing. It was damn good.
I have NEVER tried the green chili sauce. I keep meaning too. I look at it at the grocery store and almost buy it....but then I don't really know what to do with it, so I put it back.

WAY too expensive. One tiny can is around $5! Isn't a 6pk (or 8 pk?) of kirkland around $8. What a steal.

And the Kirkland cans are huge.
