What do you make, besides spaghetti, that you can feed alot of people... without spending alot of money. Leftovers for lunch the next day would be good too.
I am trying to figure out what to take for a bookclub meeting....everyone brings an entree and we share recipes.
crackslaw? stirfry? chili? (sigh) I got nuthin.

Maybe a hearty soup?
How much? People-wise and money-wise?
Some lc choices I like to make:
Pumpkin & Sausage Soup
Beef Stroganoff (Dana Carpender)
Chicken Burritos (Dana Carpender)
All of these can be found in Delicious Dish.

Around 8 people.... and probably 40 or so bucks?
Oh, wow.. the above I posted will easily feed that for alot less than that much money.
The lentils and sausage recipe I made the other day supposedly feeds 12. I got about 8 big servings out of it.

Casseroles are great for potluck. (and the leftovers are yummy!)

With a $40 budget, that kind of leaves it wide open.
A salad bar is always fun. I like to put out lettuce, chicken strips (fried or grilled), bacon bits, sliced hard-boiled eggs, cheese, pico de gallo, cooked rotini pasta, and homemade ranch dressing. Add a baguette and you're done. Everything can be made ahead and just pull it out of the fridge on the day of.
An enchilada casserole, chips, fresh fruit?
Build your own tacos/burritos/taco salad?
