I usually take a potato dish....
I have a hot potato salad recipe posted. NOT low in anything (carbs, fat, etc.). Delicious!
Thanks- his Mom is already making 3 kinds of potato dishes and pasta! I'm at a loss :(
I have also made a really good roasted veggie recipe from my cookbook. It has carrots, turnips, onions, etc. in it. I tried finding it on line but I can't. It's more of a winter type dish but if you're interested I can dig it up.

Oh thats a really good idea! She's making a salad so thats already something green.
When I make roasted veggies I usually just chop them kinda big, put olive oil, garlic, salt, pepper, thyme and some balsamic vinegar on them and roast them. Thanks!

More thanksgivingish, but any excuse.

I love Dottie's greenbean casserole on LindaSue's site. I add extra cheddar though and I make the frozen bean version instead of canned. I've had tons of compliments. http://users3.ev1.net/~fontlady/dotties_green_bean_casserole.html

I liked peas, mixed with steamed baby carrots, glazed with butter and brown sugar. it's easy but it's soo pretty and colourful and is so so tasty.
