View Full Version : This calls for rice... can it be converted to LC?

I was thinking about making a seafood dinner with a side of cheesy fauxtatoes. I just don't know how this would bake without the rice.

If not, any one have any suggestions for a meatless, LC, and easy meal I could make for dinner? I have a tomato and some mushrooms that I'd like to use up, but it's not required.

could you use minced cauliflower for the rice?

Yeah, I was thinking about that, but I really wanted to try cheesy fauxtatoes. So that would be alot of cauliflower. LOL. But I can be flexible. ;)

Oh, fudge. Never mind. Alison probably can't eat scallops. Back to square one.

Yeah, she can. She does like fish. But for being a fish lover and somewhat okay in the kitchen, I need recipes. I can't just say "I'll whip up some mushrooms and bake some fish and add this and that and it will be good." I'll do more digging to see what I can find. The recipezaar site is cool, but their "low carb" listings are rarely LC. The above one came from that filter!

INGREDIENTS:

8 large fresh mushrooms, sliced
8 ounces spinach, rinsed and chopped
1 tablespoon crumbled feta cheese
4 (4 ounce) fillets flounder
DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C). Spray an unheated medium skillet with no-stick spray. Heat the skillet over medium heat. Add the mushrooms and cook about 5 minutes or until the liquid released from the mushrooms has evaporated, stirring occasionally. Add the spinach to the skillet. Cook and stir about 2 minutes or until spinach is wilted. Remove from the heat and drain excess moisture. Sprinkle the feta cheese over the vegetables, then stir it in. To assemble the fish (http://www.phenomsonline.com/board/) rolls, place one-quarter of the spinach mixture onto the wide end of each filet. Carefully roll the filet around the spinach mixture. Use wooden toothpicks to hold the end of each roll in place. Spray an 8x8 inch baking (http://www.phenomsonline.com/board/) dish with non-stick spray. Place the fish rolls, seam side down, in the baking dish. Add 2 tablespoons of water. Loosely cover with foil.
Bake (http://www.phenomsonline.com/board/) in a preheated oven for 15 to 20 minutes or until fish flakes easily when tested with a fork and is opaque all the way through.

but I would add garlic, a bit of cream or cream cheese to the spinach and some seasonings

Oh, that looks super easy.
