I've been experimenting the past few mornings. I've actually taken the veggies that I had leftover from the night before and used them in my omelets.

The first omelet I added about a cup of broccoli. I whipped my eggs and poured it into my pan. Then I placed the broccoli florettes on half of the egg. Then I sprinkled some shredded cheese on top of this. When it was ready, I flipped half of the egg over top of the broccoli half. I put a little garlic salt on it while it was frying. It was very delicious! :eat:

The second omelet I mixed in chopped spinach to the egg mixture before I poured it into the pan. I sprinkled some cheese into the middle like I did for the broccoli omelet. It came out surprising good, too! I had something similar at Bob Evans one time, so that's where I got the idea for the spinach omelet.

ETA: Please excuse my stupid spelling of omelet. :mad:

I've had spinach in an omelet, never broccoli, but it sounds good!

My favorite omlette is made w/ left over taco meat. Pour in the eggs until they firm up a bit. Sprinkle with taco meat, cheddar cheese, sour cream, and salsa. Fold over other half.

If you by chance have some feta cheese it's great with broc or spinach in an omlette!

That sounds really good! I went out for breakfast yesterday and ordered a cheese omelet with bacon (I meant on the side) but they put like 6 strips of bacon IN the omelet with the cheese. It was actually awesome :blush:
